It seems that there is no existing documentation for centOS in English, but I find some related issues, as the links shown below. Also, you can try the guide @lucky has mentioned by google translating it.
Although I’m not an expert in centOS, maybe what you should do is to change kernel version to a compatible one, install the dependent packages, and follow the installation guide to build free5GC.
Another way to run free5GC on centOS is to use container. The documentation for free5gc-compose can be found here.
